Blueberry Muffin Energy Bites {Gluten-Free + Vegan}


For those mornings (or any time really) that you're in a rush, you should be reaching for these little guys.

Don't get me wrong, I'm a huge energy bite/Larabar lover. But, this recipe will actually knock your socks off. Not only are these CRAZY delicious, but they're filling and will fuel you up for the day wherever you are.


If you're like me, you'll be packing these bites of deliciousness into ziplocs to stuff in the bag you're toting around. I love snacking on these at my desk while I'm at work!

Okay, enough of my ramblings... Let's get cooking:


BLUEBERRY MUFFIN ENERGY BITES

Ingredients:
  • 2 cups nuts (I used a mix of cashews and almonds!)
  • 1 cup mejdool dates
  • 1 cup dried blueberries
  • 1 1/2 tsp. vanilla extract
  • Juice of half a lemon, zest from one lemon
  • 1/4 tsp sea salt
Directions:
  1. Add nut mix to you food processor (I used the shredding blade for my 9-cup Cuisinart processor). Process until around the size of a pea.
  2. Add in your dates, dried blueberries and process all together until the mix is a sticky consistency.
  3. Squeeze in lemon juice and add lemon zest. Pour in vanilla extract.
  4. Process all ingredients together until it comes together to form a glob/ball.
  5. Roll the sticky mixture into small balls and enjoy! 
*You can store these in your fridge for up to a week, or in your freezer for longer.
