Sweet Sunday + Vegan Pumpkin Cinnamon Rolls


Oh must it be Sunday already?!

Just when I get into relax mode after completing errands, cleaning and the other to-dos, it's back to prepping for this week mode.... dang it.

Today's plans include laundry, cleaning the car and cooking some recipes I've been curious to try out (i.e. blueberry muffin no-bake energy bites, NOM stay tuned). But, iced vegan pumpkin rolls are definitely helping make this day a little sweeter.


Though tomorrow is the beginning of the work week, Sunday is my favorite day of the week. Maybe it's my idea that Sunday's are to be spent relaxing and being care-free. Or maybe it's because I've usually completed all the to-dos by today and I feel stress-free. Either way, it's a good day.

Maybe you're just now waking up from hibernation after last night's crazy adventures. Craving something sweet, scrumptious and perfectly seasonal? Check out this recipe for my vegan pumpkin rolls! Oh yeah, pumpkin spice everything baby.


VEGAN PUMPKIN CINNAMON ROLLS

INGREDIENTS:
  • 1 packet instant yeast
  • 1 cup unsweetened almond milk (I use Silk!)
  • 6 tbsp vegan/grass-fed butter
  • 1/4 tsp sea salt
  • 1/3 cup + 2 tbsp raw cane sugar
  • 1/3 cup organic pumpkin puree
  • 2 3/4 - 3 1/4 cups Bob's Red Mill Gluten-Free Flour
  • 1/2 tsp + 1 tbsp cinnamon
  • 1 1/2 tsp pumpkin pie spice 
  • 1/2 cup + 1 tbsp pumpkin butter (I love Trader Joe's Pumpkin Butter)
INSTRUCTIONS:
  1. In a small sauce pan over medium heat, warm the almond milk and 2 tbsp vegan butter until melted, never reaching boiling. Remove from stovetop and let it cool (should cool to about 110 degrees). It should be warm but not to hot! Transfer mixture to a large mixing bowl once cooled.
  2. Sprinkle on yeast. Let activate for 10 minutes, and add 1 tbsp sugar, 1/4 tsp salt, 1/2 tsp cinnamon, and 1 tsp pumpkin pie spice and stir. Let it set for a few minutes and then whisk in pumpkin puree. 
  3. Add in flour 1/2 cup at a time, stirring as you go. The dough will thicken and become sticky! Once too thick to stir, you should move to a flour-covered surface and knead for a minute, as flour as needed.
  4. Coat a clean mixing bowl with some coconut oil, and add your dough ball back in the bowl and roll around to coat. Cover the bowl with plastic wrap and set in a warm place to rise for about 45 minutes to an hour (or look for it to be doubled in size). 
  5. On a lightly, flour-covered surface, roll the dough into a thin rectangle. Brush the dough with 2.5 tbsp of melted vegan butter and 1/2 cup pumpkin butter. Top with 1/3 cup sugar, 1 tbsp cinnamon, and 1/2 tsp pumpkin pie spice.
  6. Starting on one of the ends, tightly roll up the dough - make sure that the seam side is face down. Then with a serrated knife, cut the dough into 1.75 inch sections and position onto a greased baking pan. 
  7. Brush the rounds with the remaining 2 tbsp melted vegan butter mixed with 1 tbsp pumpkin butter (for extra yummy taste), sprinkle with 1 tbsp raw sugar, and cover with plastic wrap. Set it aside to let it rise again, and preheat your oven to 350 degrees F. 
  8. Bake the rolls for 30-40 minutes or until golden brown. Let cool before serving.
  9. For the glaze:
    • Melt 1 tbsp vegan butter and whisk in 2 cups powdered sugar. Mix and gradually thin with almond milk 1 tsp at a time until perfect thickness. Add 1 tbsp pumpkin butter and a dash of brown sugar for more flavor! 
  10. Pour the glaze over your buns and enjoy!
