Pumpkin Pie Dark Chocolate Energy Bites


Today is one of my favorite days because it's the official FIRST DAY OF AUTUMN!! If only the Florida weather was feeling the fall spirit.....

Lately, the days have been long and I've been lacking serious energy - a.k.a. trying my hardest not to fall asleep at work. I've got a bunch of energy bite recipes I've been itching to make, but these just sounded like the perfect ones to whip up first.

YES, I'm a major fall lover. Gimme pumpkin everything, from candles to pies. Bring on the sweater weather. For a gal who lives in Florida, I sure do hate the heat.


So if you feel my struggle, you'll probably enjoy reaching for one of these babies in your kitchen to munch on when the hunger strikes. The best part? They're healthy! These bites are gluten-free, dairy-free, soy-free and vegan. So, for those of you that suffer from food allergies, I think you're going to love these! 

Alright, alright - let's get to it.


Ingredients:
Directions:

  1. In a medium bowl, whisk together the oats, protein powder, cinnamon, and sugar. 
  2. Stir in the pumpkin purée. Fold in the chocolate chips. 
  3. Divide the mixture and roll into a small balls - whichever size you prefer.
  4. Store in the fridge to maximize freshness - consume within 5 days

And there you have it! Such an easy recipe for a perfect on-the-go snack.
