Chia Breakfast Pudding + Berries and Coconut


Holy crap, adulthood has really hit.

Graduated college. Moved out. Getting ready to start a full-time job. *Panic attack*

With all these changes comes the need for me to return to my healthy diet and exercise routine (Yeah, I'm pretty serious about my eating and working out) since these past two weeks I've been living like a crazy person. And sadly consuming foods I'd normally never eat. And turning into a slight couch potato while catching up on Scandal, The Royals (new fave show!!!) and The Voice.

So my homemade chia seed pudding now comes into play. I'm back on track with my diet and fitness routine, and I thought I'd share this scrumptious dish with you all to make for yourselves to enjoy at home. It's healthy, yummy, and prepared the evening before so it's quick in the morning! 

Have at it babes:

Ingredients:
  • 1 1/4 cups almond milk
  • 1 ripe banana
  • 1 tablespoon almond butter
  • 1 teaspoon honey or maple syrup
  • handful of frozen blueberries (+ blackberries, coconut or any other toppings of choice!)
  • 5 tablespoons chia seeds
Directions:
  1. Place the almond milk, banana, almond butter, honey and frozen blueberries in a blender and blend them all up until smooth!
  2. Pour the mix into a bowl and add the chia seeds. Stir everything together.
  3. Cover the bowl (or whatever you put it in) and leave it in the fridge overnight - or at least 6 hours so the seeds can expand - notice the difference before and the after in my photos
  4. Enjoy the next morning with your desired toppings/impress your friends over for brunch with this easy recipe! 

I can't wait for what the next chapter of my life may bring. Hopefully, things just get better from here!
