Petite Strawberry Shortcakes


With Valentine's Day coming up this weekend, the pressure is on for the perfect outfit, date, recipe and more. 

When it comes to spoiling your sweetie, I'm an advocate of straying away from the store-bought candies and making something from scratch (always fresh and a healthier option too!). While everyone isn't blessed with cooking/baking skills, this recipe is so easy that I'm sure anyone can make these little babies without a problem! 

Not only are they just SO. DARN. CUTE. They are perfect for a pair that's spending the night in or for gals looking for more portion-friendly options.

So, here is an easy V-day treat that you'll be able to whip up quick! P.s. these strawberries were picked fresh from my hometown and made for an incrediblllllyyy tasty dessert.



Ingredients:
  • muffin/cupcake pan
  • cupcake liners
  • cake mix called for eggs, water and butter (I used a store-bought mix that I had handy because I wasn't able to make another trip for groceries, but feel free to use your favorite cake mix here!)
  • 2 1/2 cups of strawberries (I recommend freshly picked if possible! If store-bought, grab two packages - one for the recipe and a few extra for another batch since the cake mix will make more than enough for two)
  • 1 cup of sugar
  • tub of cool whip or whipped cream substitute
Directions:

For the glaze - 
1. Slice the strawberries in halves (or quarters, depends on your preference). 
2. Mix the 2.5 cups of strawberries in a tupperware or dish (just make sure it has a lid!) with the 1 cup of sugar. **Note: the sugar draws out the natural juices of the strawberries to give you an all-natural sweet glaze.
3. Stir around in your chosen dish and place in the fridge to cool for about an hour and a half. **The longer it sits in the fridge, the thicker the glaze will be!!

For the cake - 
1. Preheat the oven. Mix the cake ingredients as directed.
2. Line your cupcake/muffin pan with your liners.
3. Fill each compartment 3/4 of the way full with your cake batter. **Don't fill them too high, because the batter will rise!
4. Place in the oven to bake per cake instructions. Pull them out when golden brown so that the cake isn't overcooked and stays moist!
5. Pull out of you pan and set aside to cool a bit. 
6. Once the cupcakes have cooled, pull off the liners and place however many mini cakes you want to eat onto a separate plate!
7. Pull out your natural glaze and drizzle some of the liquid portion over your cakes first. I like to place a couple of my extra slice strawberries around the plate for appearance, and then drizzle the sweetened sliced berries over the tops of your petite cakes!
8. Finish things off by adding a dollop of whipped cream (or your whipped desired substitute) onto the top of each cupcake-sized strawberry shortcake and VIOLA!

I loved getting to make these mini treats for my mother and I while having a girl's night at home. We were eager to make something with our freshly picked strawberries, and these bad boys did just the trick for our sweet tooth craving!

And what goes perfectly with one of these petite strawberry shortcakes?? A hot cup of coffee or tea (of course!) in one of these adorable Shutterfly personalized mugs! You can even personalize your own with some of your favorite pics or designs!!
