Mint & Original Oreo Stuffed Cupcakes


LOL. My sweet tooth literally never goes away. 

I'm a baking addict, sorry not sorry. 

Soooo when I stumbled across the idea for these bad boys, I rushed to the nearest grocery store to gather my supplies and get cookin'.

Are you craving chocolate? Don't lie because I know that you are. Do you find those double stuff Oreos simply irresistible? I know I do. Well my sweeties, this recipe is just for you. 

INGREDIENTS (Makes about 24 cupcakes):
For the cupcake:
  • 2 3/4 cups all purpose flour
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1 cup (2 sticks) unsalted butter, softened
  • 2 cups sugar
  • 4 large eggs
  • 1 cup milk (I use almond milk with mine!)
  • 1 tsp. vanilla extract
  • 1 pckg. Double Stuff Oreos
  • 1 pckg. Mint Oreos
  • cupcake liners
For the frosting:
  • 2 tubs of Betty Crocker Whipped Vanilla icing (I chose the shortcut route here since I was short on time)
  • Oreos - can be used from leftover quantity listed above


DIRECTIONS:
For the cake:
  1. Preheat oven to 350 degrees F. Line muffin tins with cupcake liners. Insert an Oreo (whichever flavor you fancy) at the bottom of each liner - so the batter will be poured on top of it.
  2. In a small bowl, combine the flour, baking powder and salt. Set aside.
  3. In a large bowl, on the medium speed of an electric mixer, cream the butter until smooth. Add the sugar gradually and beat until fluffy (about 3 minutes). Add the eggs, one at a time, beating well after each addition.
  4. Add the dry ingredients in three parts, alternating with the milk and vanilla. With each addition, beat until the ingredients are incorporated but do not over beat. 
  5. Using a rubber spatula, scrape down the batter in the bowl to make sure the ingredients are well blended. Carefully spoon the batter into the cupcake liners, filling them about 3/4 full. 
  6. Bake for 15-20 minutes, or until a cake tester inserted into the center of the cupcake comes out clean. 
  7. Cool the cupcakes for 15-20 minutes by removing them from the tins and setting on a wire rack before icing. 
For the icing:
  1. Place 12-15 Oreos (or more if you want the icing to include more) in a bag and crush into tiny pieces. **I used a mixture of regular and mint Oreos here for the flavor! But, you can do one or the other as well!**
  2. In a bowl, mix the two tubs of icings and crushed Oreos together. Mix them completely to create the perfect, even icing! 
  3. Once cupcakes have cooled, frost each cupcake with the icing.
  4. For garnish, cut remainder of Oreos in halves and place one half in the center of each cupcake.
  5. Enjoy!

Believe me, you will have a hard time keeping yourself from eating all of them. But, with the help of some friends and family, these babies won't last long.
