Almond Butter Energy Bites

Okay, I will admit, I've turned into a health nut over the past year - integrating fruits, veggies, nuts and juices into my daily diet and exercising every single day (I've loved the results!). So, I've been experimenting with some old recipes that I have and substituting with some healthier ingredients.

Originally this recipe used peanut butter and chocolate chips. However, I'm now a HUGE fan of almond butters - there are some with chia and flax seeds mixed in too! 

Soooo here's an updated recipe for these yummy little bites using my almond butter substitution! 

Almond Butter Energy Bites: Makes about a dozen

  • 1 cup old fashioned oats
  • 3.5 tablespoons of almond butter
  • 1 teaspoon vanilla
  • 1 tablespoon honey
  • coconut flakes (optional)
Super easy!! Just combine all four ingredients into a mixing bowl (and your desired amount of coconut flakes, if you're adding that in there) and stir together well! The mixture will turn into a thicker, dough-like consistency. Once you reach that point, you can spoon out the mixture and use your hands to roll into small bites. Make sure to keep refrigerated, the cold keeps the bites from falling apart.

Such a simple recipe for these tiny treats to snack on when you're on-the-go!
